Here it is again, with a new face attached.

Greek Mac & Cheese

This isn’t something that we currently offer at Mezes Greek Grill but it is something my young son enjoys.

Three items really set this recipe apart from it’s American cousin.

  1. Olive Oil
  2. Orzo
  3. Selianos

What is Selianos? Well, it’s not yellow powder.


  • 1 tbs oil olive
  • 1 tbs butter
  • 2 tbs dijon mustard
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • ½ cup mushrooms, sliced
  • Splash White Dry Wine
  • 1 ½ cup milk
  • 1 ½ cup pasta
  • Dash hungarian paprika
  • 1 cup hard yellow cheese
  • 1 cup selliano white cheese (or ezra’s feta cheese)


Place the following ingredients in a sauce-pan and


  • Olive Oil
  • Butter
  • Onion
  • Garlic


  • Mushrooms
  • White Dry Wine
  • Dijon Mustard
  • Milk (room temperature)

At the same time


  • Pasta (prefer orzo) 6 min total
  • After 3 min


  • Saute sauce to Pasta
  • Hungarian Paprika
  • Hard yellow cheese (whatever in the cooler)
  • Selliano white cheese (or ezra’s feta cheese)
